Fun fact: There are all types of different BBQ all over the country. BBQ in South Carolina is different than BBQ in Tennessee. BBQ in Central Texas is different than in East Texas. Southern BBQ is different than Kansas City BBQ. For those of you who aren’t as familiar with Texas BBQ, allow us to share some Texas BBQ knowledge.

Central Texas:

In Central Texas, we are influenced by a vastly different set of immigrants than other parts of the country. In Central Texas, we are influenced by Czech and German immigrants due to the higher Eastern immigrant population that resided here. In this part of Texas, Meat is king, and sauces and sides are second to the king. Central Texas has a large number of meat markets that concentrate on serving brisket and smoked ribs over pecans and oak wood. The kind of meat that is focused on in this part of Texas is sausage, most recently, but overall brisket, ribs, and sausage are what creates the BBQ palette here.

East Texas:

East Texas has a very different bbq style than Central Texas. In East Texas, the meat is equally made of beef and pork. What makes East Texas different is that instead of having sliced meat between two buns, they chop their meat up and drown the meat in hot sauce. This BBQ is much more sauce orientated. East Texas BBQ has more in common with Southern BBQ styles instead of the aforementioned Central Texas BBQ. A popular dish in East Texas is a chopped brisket sandwich.
